Rich Source of Nutrients and Antioxidants

Tomatoes deliver adequate to good amounts of vitamin C, potassium, folate and vitamin K, plus a host of antioxidants in its brilliant, deep red colour, including the plant pigment lycopene, which has been linked with reduced risk of some cancers, heart disease and inflammation.

Tomatoes: A Health Powerhouse

Their potassium helps to lower blood pressure, and their lycopene lowers LDL cholesterol — both boons to heart health. They provide vitamin A and lots of lutein and zeaxanthin for the eyes and skin, and studies have shown that their lycopene can help reduce the risk of certain cancers, including prostate cancer. Fresh Tomatoes:

  • Water Content: Fresh tomatoes, are juicy and succulent due to their high water content.

  • Texture: Exterior soft and shiny. Easy to dice and slice. Very thin skin, loose and easy to peel.

  • Flavor: Raw tomatoes have a bright, tart, lightly sweet taste. They are never – or very rarely – cooked, to preserve this fresh flavour.

  • Nutrients: When cooked, tomatoes lose some vitamins and minerals, but if they are eaten raw – and particularly if on salad – they are rich of vitamins, especially vitamin C and minerals.

Dehydrated Tomatoes:

  • Water Content: Most of the moisture is removed during the dehydration process, resulting in a concentrated tomato flavor.

  • Texture: Dried tomatoes are not juicy and have a soft, supple, somewhat leathery, chewy texture. They are sold dried, sliced and in half.

  • Flavor:  The dried tomatoes want to be deep and full bodied packed. Use them in sauces and soups, or add them to salads and sandwiches.

  • Nutrients: The majority of vitamins and minerals are retained when a fruit or vegetable is dried, and although some nutrient content is lost in the water during this process, generally what remains is good enough: there’s fibre, antioxidants and the like. Folates, vitamins C and K in dried tomatoes.

Freeze-Dried Tomatoes:

  • Water Content: All the tomatoes nearly lose and recover their precious moisture by freeze-drying without changing shape, colour or nutrition.

  • Texture: Freeze-dried tomatoes have a crispy, light texture they are brittle. They can be crushed or crumbled easily.

  • Flavor: Freeze-dried tomatoes are about the best way to approximate the flavour of fresh ones, as well as their appearance and texture. They really retain the natural sweet, sour flavours of a well-ripened tomato.

  • Nutrients: They’re as close as you get to fresh ingredients – freeze-dried tomatoes look, taste, and feel like the real thing, right down to the sweet-sour tang. You can add a teaspoon to almost anything you want to give more of a tomato look and taste.

Yes we did mention three kinds of tomatoes here because it’s important for you guys to know the difference (we get asked all the time the difference between dehydrated and freeze dried ones so here you have it!).
Fresh ones are best for eating them in any ways with a real taste and feel of tomatoes. However, dehydrated one is not tasteful for eating by itself (at least we are not huge fans of that). But… freeze dried tomatoes can be the best of two worlds which having the flavour for fresh tomatoes and the shelf-like of almost 10x longer than the dehydrated ones (shelf life of 30 years!).

Quality Control for Emergency Storage & Taste

Every packet of tomatoes is checked individually to ensure that, if stored properly, our product will have more than 25 years on shelf, yet still tastes like it was bought from a roadside stand. This emphasis on quality at each and every stage is critical for meeting evolving consumer standards that need to accommodate longer storage.

If you’re freeze-drying tomatoes, for example, it’s very helpful to slightly puncture them with a large pin, a step that can be skipped if you’re in a deep hurry, but that would cause the process to fail, especially for national producers who send their product in large metal containers that weight hundreds of pounds. Many competitors with less efficient vacuum tunnels end up throwing away product, and regrettably still sell it.

In November of 2023, during our conversation with Dr. Jingqi Yang, a Food Scientist from the Crop Food Processing Development Centre at Alberta Agriculture and Irrigation, she recommended flash freezing the tomatoes before freeze-drying. Using a rapid freezer, or flash freezer, prior to freeze-drying significantly enhances the quality of the end product, resulting in superior freeze-dried tomatoes.

Each batch of our freeze-dried tomatoes is tested with a commercial-grade moisture meter before proceeding to the packaging stage. For packaging the final product, we carefully consider the use of oxygen absorbers or nitrogen gas to maintain freshness and extend shelf life. A quick tip: proper storage of oxygen absorbers is crucial to prevent mold growth and food spoilage.
