That’s for another blog entry but, basically, here’s the difference: Suppose you take fresh food and put it in an oven at 32F. The ice gets warmer, but not all the ice absorbs that heat, or ends up warming the food. Most of the heat jumps right from the ice-melting point to the edges of the ice crystals, and from there the warmth can spread through the food. But if we first take the food down to -45F, and then get the water out of it, first by evaporating it from ice to vapour, every molecule now going up through the food, and right into a vacuum, then the whole process has changed. We hadn’t done a reboil, just a different kind of drying.
